Fedor Sokirianskii is the founder of the Easy2Cook food preparation concept, based on the use of technological equipment working in automatic mode, such as:
– Combi ovens
– Cook & chill systems
– Steam jacketed kettles
– Industrial sous-vide cooking systems
– Industrial slow cookers
He is the inventor of several food cooking and packaging systems, including PARMA cooking system, VapourCleaner, R.O.P. cooker, Inovac, Balk sous-vide circulator, and UV-ESL decontaminator.
Fedor Sokirianskii has conducted more than 400 seminars for development chefs, executive chefs, process technologists, and NPD specialists.
He is the creator of E2Ck Analyzer, a computer software tool that automates daily and shift-based production planning, from dish name and quantity to minute-by-minute equipment loading and production logistics.
He is also the creator of QACCP, a comprehensive evaluation system for food production and professional HoReCa kitchens based on 200 control parameters. This system allows production costs to be reduced by 20–25% through better equipment load distribution and production flow restructuring.
Over the past 10 years, he has conducted more than 5,000 QACCP audits.
Professional achievements
He supervised the reform of school catering systems in Russia and Belarus as the lead expert for the development of satellite kitchen factory systems and finishing kitchens. More than 20,000 canteens were reconstructed and fully re-equipped.
He launched the Concord school catering complex, one of the most modern school food production facilities in the world, with a capacity of 250,000 meals per day and total investments exceeding 400 million USD.
He launched five kitchen factories for the Crocus Expo exhibition center, serving more than 200,000 guests per day.
He has launched or modernized more than 110 kitchen factories for restaurant chains, delivery restaurants, dark kitchens, dark stores, bakeries, and confectionery production facilities across Russia, Kazakhstan, Ukraine, Europe, and the Middle East.
He launched all food service facilities for the Sochi 2014 Olympic Games.
He developed the dark store + ready meals store duplex concept.
He has consulted for major food retail and HoReCa brands, including SPAR, Subway, Tesco Foods, Marks & Spencer Foods, X5 Retail Group, Domino’s, Ginza Project, Maison Dellos, as well as more than 50 other HoReCa and food retail chains.
